How to Make Shrimp Quesadilla

 

What you need

  • 2 medium flour tortillas
  • 1/4 lb. raw shrimp, peeled and deveined
  • 1/2 cup shredded cheddar cheese
  • 1 medium onion
  • 1/4 teaspoon chili powder
  • Salt
  • Pepper
  • 1 tablespoon fresh cilantro
  • 1 tablespoon lemon juice
  • 2 1/2 teaspoons olive oil

Step 1

In a small bowl, mix the shrimp with chili powder, salt, pepper, and lemon juice. Leave the mixture for 8-12 minutes. Drain out the juice.

Step 2

On a non-stick or cast-iron skillet (a cast iron skillet works well for this), heat olive oil with medium-high heat.

Step 3

Add the shrimp. Cook for less than a minute on each side. Set aside.

Step 4

Using paper towels, wipe out the skillet clean. Add a little olive oil and heat the pan.

Step 5

Put one tortilla on the skillet and flip it over a few times. Remove the tortilla and do it again with the second tortilla. Leave the second tortilla in the pan and reduce the heat level.

Step 6

Put some grated cheese on the tortilla. Place the shrimp, cilantro, and onion over the cheese. Add the other tortilla on top.

Step 7

Flip the quesadilla over when the tortilla on the bottom is toasted and the cheese has started to melt. When the new bottom tortilla has toasted well, take the quesadilla out of the pan.

Step 8

Cut the quesadilla into triangles and place them on a serving plate.
